Talvez pelos cogumelos que não consigo fazer com que ele goste, sem serem "disfarçados" em molho. O que é certo, é que é um prato bem reconfortante e saboroso e sei que, desse lado, também vão adorar!
Ingredientes
4 cogumelos Pleurotus eryngii
3 ramos de brócolos
1 cenoura média
2 fatias de tofu
2 cups de caldo de legumes caseiro *
1 porção de noodles integrais/massa à escolha
1 c sobremesa de miso de cevada
4 c sopa de sementes de sésamo tostadas
Molho de soja qb
Molho teryiaki qb
Alho em pó qb
Pedaço de gengibre
Fio de Azeite
Fio de óleo de sésamo
Cebolinho fresco
preparação:
1. Cortar o tofu aos cubinhos e temperar com alho em pó e shoyu. Reservar.
2. Cortar os cogumelos às fatias e temperar com shoyu e teryiaki, envolvendo bem com as mãos ou com a ajuda de uma colher de pau até que todos os cogumelos fiquem com o molho. Reservar.
3. Descascar e cortar as cenouras em palitos finos e separar os brócolos em floretes. Reservar numa taça.
4. Ralar um pedaço de gengibre no ralador e espremer bem com as mãos até fazer sumo. Reservar.
5. Num grelhador com um fio de azeite, grelhar os cogumelos dos dois lados até que fiquem douradinhos e reservar. Na mesma frigideira, grelhar o tofu, até ficar tostado uniformemente e reservar.
6. Numa panela pequena com água a ferver, colocar uma pitada de sal e colocar os brócolos e as cenouras durante 5 minutos. Retirar quando estiverem cozidos mas ainda crocantes e reservar a água.
7. Cozer os noodles ou a massa à escolha, seguindo as instruções da embalagem, com a água de cozer os legumes.
8. Noutra panela, fazer o molho para os noodles - juntar os 2 cups de caldo de legumes caseiro com a pasta miso e sumo de gengibre e mexer bem com uma vara de arames até levantar fervura. Assim que começar a ferver desligar o lume. Provar e retificar os temperos se necessário.
9. Numa taça ou prato fundo, dispôr o tofu, os cogumelos, os brocolos e a cenoura e colocar os noodles em cima. Verter o molho de miso e servir com um ramo generoso de cebolinho picado.
10. Terminar com um fio de óleo de sésamo e sementes de sésamo tostadas e usufruir!
* Para o caldo de legumes caseiro, pode utilizar ervas aromáticas, talos e cascas de legumes como cebola, alho, alho francês e deixar ferver e cozinhar com água abundante até a mesma adquirir sabor. No final, acrescentar sal e coar com um coador. Está pronto a guardar no frigorífico em garrafas ou utilizar de imediato.
